Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole milk
  • 1 tsp baking powder
  • Red and blue food coloring
  • 2 cups powdered sugar
  • 1/4 cup cream cheese softened
  • 1 tbsp milk for frosting

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a cupcake tin with liners.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour and baking powder, then gradually add this dry mixture to the wet ingredients, alternating with milk.
  5. Divide the batter evenly into three bowls. Tint one portion red, another blue, and leave the third plain.
  6. Spoon the colored batters into cupcake liners in alternating colors, mimicking the striping of the Cat in the Hat’s hat.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool completely on a wire rack before frosting.
  9. In a mixing bowl, combine the softened cream cheese and powdered sugar, mixing until smooth, adding milk as needed to achieve a spreadable consistency.
