Ingredients
  

  • 1 sheet puff pastry
  • 1 bunch asparagus about 1 pound
  • 6 ounces goat cheese
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme optional

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface.
  3. Place the rolled pastry in a tart pan and trim the edges.
  4. Prick the pastry with a fork and bake for 10 minutes.
  5. While the pastry bakes, prepare the asparagus.
  6. In a skillet, heat olive oil over medium heat and sauté the asparagus for 3-4 minutes until bright green.
  7. In a bowl, whisk together the eggs, heavy cream, salt, pepper, and thyme (if using).
  8. Remove the pre-baked pastry from the oven.
  9. Spread the goat cheese evenly across the bottom of the tart crust.
  10. Add the sautéed asparagus to the tart, spreading them evenly over the goat cheese.
  11. Pour the egg and cream mixture over the asparagus and goat cheese.
  12. Bake the tart for 25-30 minutes or until the filling is set and the top is golden.
  13. Allow it to cool slightly before slicing and serving.
