Ingredients
  

  • 2 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 3 large eggs
  • 1 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 unbaked pie crust store-bought or homemade

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the sweet potatoes by peeling, cubing, and boiling until tender.
  3. Drain the sweet potatoes and mash until smooth.
  4. In a mixing bowl, combine the mashed sweet potatoes, sugar, and softened butter.
  5. Add the eggs one at a time, blending thoroughly after each addition.
  6. Mix in the evaporated milk, vanilla extract, cinnamon, and nutmeg until completely smooth.
  7. Pour the sweet potato mixture into the unbaked pie crust, smoothing the top with a spatula.
  8. Bake in the preheated oven for 45-50 minutes, or until set in the center.
