Ingredients
  

  • 1 cup Arborio rice
  • 2 medium beets roasted and pureed
  • 4 cups vegetable broth
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs optional, for garnish

Method
 

  1. Roast the beets.
  2. Prepare the broth.
  3. Sauté the onion and garlic.
  4. Add the Arborio rice.
  5. Deglaze with white wine.
  6. Incorporate the broth gradually.
