Ingredients
  

  • 2 medium zucchini
  • 1 cup breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray or for drizzling

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the zucchini by cutting them into thin strips.
  3. In a bowl, combine breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  4. In another bowl, whisk the egg until smooth.
  5. Dip each zucchini strip into the egg, then roll it in the breadcrumb mixture.
  6. Place the coated zucchini sticks on a baking sheet lined with parchment paper.
  7. Drizzle with olive oil or spray lightly for extra crispness.
  8. Bake for 20-25 minutes, flipping halfway through.
  9. Once golden brown, remove from the oven and let cool slightly before serving.
