Ingredients
  

  • 2 cups cooked turkey shredded
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 tablespoons curry powder
  • 1 can 14 oz coconut milk
  • 1 cup chicken or vegetable broth
  • 1 cup frozen peas
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 4 cups cooked rice

Method
 

  1. Prepare the ingredients.
  2. Heat oil in a large skillet over medium heat.
  3. Sauté onion until translucent, about 5 minutes.
  4. Add garlic and ginger, cooking for an additional minute.
  5. Stir in the curry powder, cooking for 30 seconds.
  6. Pour in the coconut milk and broth, mixing well.
  7. Bring the mixture to a gentle simmer.
  8. Add the shredded turkey and stir to coat.
  9. Add frozen peas and continue to simmer for 5 minutes.
  10. Season with salt and pepper to taste.
  11. Serve hot over cooked rice.
