Preheat your oven to 425°F (220°C).
Wash and peel the sweet potatoes, then cut them into small cubes, about 1 inch in size.
In a mixing bowl, combine the sweet potato cubes with olive oil, paprika, garlic powder, salt, and pepper. Toss well to coat evenly.
Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
Bake for 25–30 minutes, turning halfway through, until they are golden brown and tender.
Remove from the oven and let cool for a few minutes before serving, adding any optional toppings if desired.
