Smashed Chickpea and Avocado Sandwich made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 can 15 oz chickpeas
  • 1 ripe avocado
  • 1 tbsp lemon juice
  • Salt to taste
  • 1/4 tsp cumin
  • 2 slices of whole-grain bread
  • Fresh spinach or arugula optional
  • Sliced tomato optional

Method
 

  1. Drain and rinse the chickpeas thoroughly.
  2. In a mixing bowl, smash the chickpeas with a fork or potato masher.
  3. Add the ripe avocado and lemon juice to the bowl, and mix well.
  4. Season with salt and cumin, adjusting to taste.
  5. Toast the whole-grain bread to your liking.
  6. Spread the chickpea and avocado mixture onto one slice of toast.
  7. Top with fresh spinach or arugula and sliced tomatoes if desired.
  8. Complete the sandwich with the second slice of toast.
