Ingredients
  

  • 2 cups fresh cherries pitted
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 pinch salt

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the cherries by washing and pitting them.
  3. In a large bowl, toss the cherries with olive oil, brown sugar, cinnamon, and salt until well-coated.
  4. Spread the cherries in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 20-25 minutes, stirring halfway through.
  6. Remove the baking sheet from the oven and let the cherries cool slightly before serving.
