Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 slices of ham
  • 8 slices of Swiss cheese
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your chicken breasts by gently pounding them to even thickness.
  3. Layer each breast with ham and cheese, then roll them up tightly.
  4. Secure the rolled chicken with toothpicks.
  5. In a shallow bowl, mix almond flour, Parmesan, garlic powder, onion powder, salt, and pepper for the coating.
  6. In another bowl, beat the eggs until frothy.
  7. Dip each chicken roll first in the beaten eggs, then coat it in the almond flour mixture.
  8. Place the coated chicken rolls on a baking sheet lined with parchment paper.
  9. Give the coated chicken a light spray of olive oil to enhance crisping.
  10. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through.
  11. Remove from the oven, allow to rest for a few minutes, and then remove toothpicks before slicing.
