In a shallow bowl, mix almond flour, Parmesan, garlic powder, onion powder, salt, and pepper for the coating.
In another bowl, beat the eggs until frothy.
Dip each chicken roll first in the beaten eggs, then coat it in the almond flour mixture.
Place the coated chicken rolls on a baking sheet lined with parchment paper.
Give the coated chicken a light spray of olive oil to enhance crisping.
Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through.
Remove from the oven, allow to rest for a few minutes, and then remove toothpicks before slicing.
