Method
- Prepare the leeks by slicing them
- Heat olive oil or butter in a large pot over medium heat
- Add the sliced leeks and sauté until soft
- Incorporate the minced garlic and cook for another minute
- Pour in the broth and bring to a simmer
- Blend the soup until smooth using an immersion blender
- Return the smooth soup to the pot and stir in the cream
- Serve hot, garnished with fresh herbs if desired
