Ingredients
  

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini sliced
  • 1 red onion quartered
  • 8 oz button mushrooms whole
  • 1 cup cherry tomatoes whole
  • 1/4 cup balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

  1. Preheat the grill to medium-high heat.
  2. Prepare the vegetables by cutting them into bite-sized pieces.
  3. In a bowl, combine the vegetables, olive oil, salt, and pepper; toss until evenly coated.
  4. Thread the vegetables onto skewers, alternating colors and types.
  5. Grill the skewers for 10-15 minutes, turning occasionally until tender and charred.
  6. During the last couple of minutes, brush the skewers with balsamic glaze.
  7. Remove from the grill and let cool for a few minutes before serving.
  8. Garnish with fresh basil before serving.
