Delicious Green Goddess Black Bean Burgers for Home Cooks

Ingredients
  

  • 2 15 oz cans black beans, drained and rinsed
  • 1 cup breadcrumbs
  • 1 cup finely chopped bell pepper
  • 1/2 cup finely chopped red onion
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 tablespoons fresh cilantro chopped
  • 1 avocado mashed (for the Green Goddess dressing)
  • 1/4 cup Greek yogurt for the Green Goddess dressing
  • 1 tablespoon lemon juice for the Green Goddess dressing
  • 1/4 cup chopped fresh herbs parsley, chives, and basil for the dressing

Method
 

  1. Preheat your grill or skillet over medium heat.
  2. In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  3. Add the breadcrumbs, bell pepper, onion, garlic, olive oil, cumin, smoked paprika, and cilantro to the mashed beans.
  4. Mix well until all ingredients are fully combined, then let the mixture sit for about 10 minutes.
  5. Shape the mixture into 4-6 equal-sized patties, pressing firmly to ensure they hold their shape.
  6. For the Green Goddess dressing, combine mashed avocado, Greek yogurt, lemon juice, and chopped herbs in a bowl; mix until smooth.
  7. Cook the patties on the preheated grill or skillet for about 4-5 minutes per side, or until browned.
  8. Once finished, let the burgers rest for a couple of minutes before serving.
  9. Serve the burgers on buns with the Green Goddess dressing and additional toppings of your choice.
