While the pasta cooks, heat olive oil in a large skillet over medium heat and add the minced garlic.
Add the spinach to the skillet and sauté until wilted, about 2-3 minutes.
In a bowl, whisk together the eggs with salt and pepper.
Add the cooked pasta to the skillet with spinach and garlic, then pour the eggs over the top.
Gently stir to combine and cook the eggs to your preferred doneness, about 2-4 minutes.
If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Serve warm, garnished with grated Parmesan cheese and additional salt and pepper, if desired.
