Delicious Cherry Pancakes Topped with Almonds

Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 cup fresh or frozen cherries pitted and halved
  • 1/2 cup sliced almonds
  • Butter or oil for cooking

Method
 

  1. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk and egg, whisking until combined.
  3. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
  4. Fold in the halved cherries carefully, avoiding excessive stirring.
  5. Heat a skillet or griddle over medium heat and add a small amount of butter or oil.
  6. Pour a ladleful of pancake batter into the skillet, making sure to leave space between each pancake.
  7. Cook until bubbles form on the surface of the pancake and the edges appear set, then flip.
  8. Cook for an additional 1-2 minutes on the other side until golden brown.
  9. Remove the pancakes from the skillet and keep warm while you cook the remaining batter.
  10. Serve the pancakes warm, topped with sliced almonds and additional cherries as desired.
