Ingredients
  

  • 1 medium butternut squash peeled and diced (about 4 cups)
  • 1 can 14 oz coconut milk
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1- inch piece of ginger grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • Salt to taste
  • Fresh cilantro for garnish

Method
