Ingredients
  

  • 1 head of cauliflower
  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup shredded cheese cheddar or dairy-free
  • 1/2 cup green onions chopped
  • 1/2 cup sour cream or a vegan alternative
  • 1/2 cup diced tomatoes

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the cauliflower into bite-sized florets.
  3. In a large bowl, toss the cauliflower with olive oil, garlic powder, paprika, and a pinch of salt.
  4. Spread the seasoned cauliflower on a baking sheet in a single layer.
  5. Roast the cauliflower for 25-30 minutes or until golden brown.
  6. Remove the cauliflower from the oven and drizzle with buffalo sauce.
  7. Layer the buffalo cauliflower on a serving platter and sprinkle cheese on top.
  8. Return the platter to the oven for 5-7 minutes to melt the cheese.
  9. Top the nachos with green onions, diced tomatoes, and a drizzle of sour cream.
