Ingredients
  

  • 3-4 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1 onion quartered
  • 3 cloves garlic minced
  • 2 carrots cut into chunks
  • 2 stalks celery cut into chunks
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Method
 

  1. Preheat the air fryer to 320°F (160°C).
  2. Rub the chuck roast with olive oil, salt, and pepper.
  3. Sear the roast in the air fryer basket for 20 minutes.
  4. Add the quartered onion, minced garlic, carrots, and celery around the roast.
  5. Pour in the beef broth and sprinkle with dried thyme.
  6. Air fry the pot roast for 60-70 minutes, flipping halfway.
  7. Check the internal temperature; it should reach at least 190°F (88°C).
  8. Let the roast rest for 15 minutes before slicing.
