Decadent Loaded Potato Skins for Home Entertaining

Loaded Potato Skins made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 4 large russet potatoes
  • 8 oz shredded cheddar cheese
  • 6 slices of bacon cooked and crumbled
  • 1/2 cup sour cream
  • 2 green onions chopped
  • Olive oil
  • Salt and black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly.
  3. Pierce each potato with a fork several times.
  4. Rub the potatoes with olive oil and sprinkle with salt.
  5. Bake the potatoes for about 45-60 minutes.
  6. Let the potatoes cool slightly before handling.
  7. Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin layer.
  8. Brush the skins with olive oil and season with salt and pepper.
  9. Return the potato skins to the oven and bake for an additional 10-15 minutes.
  10. Fill each potato skin with cheese, bacon, and green onions.
  11. Bake again for 5-10 minutes until cheese is melted.
  12. Serve hot with dollops of sour cream on top.
