Let the potatoes cool slightly before handling.
Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin layer.
Brush the skins with olive oil and season with salt and pepper.
Return the potato skins to the oven and bake for an additional 10-15 minutes.
Fill each potato skin with cheese, bacon, and green onions.
Bake again for 5-10 minutes until cheese is melted.
Serve hot with dollops of sour cream on top.
