Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 cups bell peppers diced (mix of colors)
  • 1 can 14.5 oz diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • 1 teaspoon black pepper
  • 1 cup cooked rice or quinoa

Method
 

  1. Brown the ground beef in a skillet over medium heat, then drain excess fat.
  2. Add the chopped onion and minced garlic to the skillet; sauté until translucent.
  3. Transfer the beef, onion, and garlic mixture to the crockpot.
  4. Stir in diced tomatoes, beef broth, diced bell peppers, Italian seasoning, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Add in the cooked rice or quinoa in the last 30 minutes of cooking.
  7. Taste and adjust seasoning if necessary before serving.
