- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- Add the chopped onion and minced garlic to the skillet; sauté until translucent.
- Transfer the beef, onion, and garlic mixture to the crockpot.
- Stir in diced tomatoes, beef broth, diced bell peppers, Italian seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Add in the cooked rice or quinoa in the last 30 minutes of cooking.
- Taste and adjust seasoning if necessary before serving.
