Crispy Air Fryer Eggplant made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 medium eggplant
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or olive oil spray

Method
 

  1. Prepare the eggplant by slicing it evenly into 1/2-inch rounds.
  2. Sprinkle the eggplant slices with salt and let them sit for 20 minutes.
  3. Prepare the breading station: beat the eggs in one bowl and mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper in another bowl.
  4. Dip each eggplant slice in the egg mixture, then coat with the breadcrumb mixture, pressing gently to adhere.
  5. Preheat the air fryer to 380°F (193°C) for about 5 minutes.
  6. Spray the air fryer basket lightly with cooking spray to prevent sticking.
  7. Arrange the breaded eggplant slices in a single layer in the air fryer basket.
  8. Lightly spray the top of the eggplant slices with cooking spray.
  9. Cook for 12-15 minutes, flipping halfway through, until golden and crispy.
  10. Remove from air fryer and let cool for a few minutes before serving.
