Crispy Air Fryer Chicken with Colorful Vegetables

Air fryer chicken with vegetable made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mixed vegetables bell peppers, zucchini, broccoli
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder

Method
 

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine olive oil, garlic powder, paprika, salt, black pepper, oregano, and onion powder.
  3. Add the chicken breasts to the bowl and coat them evenly in the seasoning mixture.
  4. Prepare the vegetables by cutting them into bite-sized pieces and seasoning with a bit of olive oil, salt, and pepper.
  5. Place the chicken breasts in the air fryer basket in a single layer.
  6. Cook the chicken at 400°F (200°C) for 10 minutes.
  7. After 10 minutes, add the mixed vegetables around the chicken in the air fryer.
  8. Cook for an additional 8–10 minutes, until the chicken is fully cooked and vegetables are tender.
  9. Let the chicken rest for a few minutes before slicing, and serve with vegetables.
