Preheat your oven to 350°F (175°C).
Lightly spray a muffin tin with cooking spray or brush it with olive oil.
Press a wonton wrapper into each muffin cup, forming a cup shape.
Bake the wonton wrappers for about 8-10 minutes, or until golden brown.
While the wrappers bake, cook the ground meat in a skillet over medium heat.
Add the taco seasoning to the cooked meat and stir well.
Mix in the diced tomatoes and half of the shredded cheese.
Spoon the meat mixture into the baked wonton cups.
Top with remaining cheese and bake for an additional 5-7 minutes.
Remove from the oven and let cool for a few minutes before serving.
Garnish with sour cream and green onions just before serving.
