Ingredients
  

  • 2 medium eggplants sliced
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 2 cups breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Fresh basil leaves for garnish

Method
 

  1. Prepare the eggplant by salting.
  2. Rinse and dry the eggplant slices.
  3. Dredge the eggplant in flour, egg, and breadcrumbs.
  4. Fry the eggplant slices.
  5. Preheat the oven and assemble the layers.
  6. Bake the Eggplant Parmesan.
  7. Garnish and serve.
