Creating a Flavor-Packed Salmon Poke Bowl

Ingredients
  

  • 1 pound fresh sushi-grade salmon diced
  • 2 cups sushi rice
  • ¼ cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 avocado sliced
  • ½ cup cucumber diced
  • ¼ cup radishes thinly sliced
  • ¼ cup edamame shelled
  • Sesame seeds for garnish

Method
 

  1. Prepare sushi rice according to package instructions.
  2. In a bowl, combine soy sauce, sesame oil, and rice vinegar.
  3. Add the diced salmon to the marinade and gently toss to coat.
  4. While the salmon marinates, prepare the toppings.
  5. Once the rice has cooled, season it with a bit of rice vinegar.
  6. Assemble the poke bowls by starting with a base of rice.
  7. Top the rice with marinated salmon and arrange remaining toppings on top.
  8. Drizzle with extra soy sauce, if desired, and sprinkle sesame seeds on top.
