Ingredients
  

  • 1 pound smoked sausage sliced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 carrots chopped
  • 1 red bell pepper diced
  • 2 cups corn fresh or frozen
  • 3 cups chicken broth
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup heavy cream
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

  1. Brown the sliced sausage in a large pot over medium heat.
  2. Add diced onion, garlic, carrots, and bell pepper; sauté until softened.
  3. Stir in the corn, chicken broth, black beans, and chili powder.
  4. Bring the mixture to a boil, then reduce the heat and simmer.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Serve hot, garnished with fresh cilantro.
