Crafting Delicious Kale Pesto Pasta at Home

Kale Pesto Pasta made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 200 g fresh kale stems removed
  • 50 g walnuts toasted
  • 50 g grated Parmesan cheese
  • 2 garlic cloves peeled
  • 120 ml extra virgin olive oil
  • Juice of one lemon
  • Salt and black pepper to taste
  • 300 g pasta of choice

Method
 

  1. Prepare the kale by rinsing and removing the stems.
  2. Toast the walnuts in a dry skillet over medium heat until fragrant.
  3. In a food processor, combine kale, toasted walnuts, garlic, and Parmesan cheese.
  4. While processing, slowly drizzle in the olive oil until smooth.
  5. Add lemon juice, salt, and pepper, adjusting to taste.
  6. Cook the pasta according to package instructions until al dente.
  7. Toss the cooked pasta with the kale pesto, adding reserved pasta water as needed.
  8. Serve immediately with extra Parmesan and a drizzle of olive oil.
