Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 can 14.5 oz diced tomatoes
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1-2 jalapeƱos chopped (optional)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Tortilla strips for garnish
  • Fresh cilantro for garnish optional

Method
 

  1. Add chicken breasts to the crockpot.
  2. Add diced onion and minced garlic.
  3. Pour in the chicken broth and canned tomatoes.
  4. Add black beans, corn, jalapeƱos, cumin, chili powder, paprika, salt, and pepper.
  5. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken with two forks just before serving.
  7. Stir in lime juice and adjust seasoning.
  8. Serve hot, garnished with tortilla strips and cilantro.
