Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 1 can 14.5 oz diced tomatoes
  • 1 cup carrots diced
  • 1 cup spinach or kale chopped
  • 1 package 9 oz refrigerated tortellini
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Pour in the vegetable or chicken broth and diced tomatoes; bring to a simmer.
  5. Add diced carrots and let the soup simmer for 5-7 minutes.
  6. Stir in the tortellini and cook per package instructions, typically 3-5 minutes.
  7. Add chopped spinach or kale and Italian seasoning; stir to combine.
  8. Season with salt and pepper to taste before serving.
