Ingredients
  

  • 1 lb ground beef or turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups bell peppers diced (mixed colors)
  • 1 can 15 oz diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 cup rice or quinoa for a healthier option
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Brown the ground meat in a large pot over medium heat until fully cooked, breaking it up as it cooks.
  2. Add the chopped onion and minced garlic to the pot; sauté until softened.
  3. Stir in the diced bell peppers and cook for about 5 minutes, allowing them to soften slightly.
  4. Add the canned tomatoes, broth, rice, and Italian seasoning; stir well.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the rice is tender.
  6. Taste and adjust seasoning with salt and pepper as needed before serving.
  7. Serve hot, garnished with fresh herbs if desired.
