Ingredients
  

  • 1 cup quinoa
  • 2 cups water
  • 1 lb boneless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons ranch seasoning
  • 1 bell pepper diced
  • 1 cup corn fresh or frozen
  • 1 cup cherry tomatoes halved
  • 2 cups mixed greens or spinach
  • ½ cup ranch dressing

Method
 

  1. Rinse the quinoa under cold water.
  2. Cook quinoa in water just to a boil, then simmer.
  3. Let the quinoa sit covered to steam.
  4. Preheat the grill or oven for the chicken.
  5. Season the chicken with olive oil and ranch seasoning.
  6. Cook the chicken until fully cooked, then slice.
  7. Combine the cooked quinoa, chicken, and veggies in a large bowl.
  8. Add the ranch dressing and toss to combine.
