Method
- Prepare the vegetables for skewering.
- Soak wooden skewers in water for at least 30 minutes.
- Preheat the grill on medium-high heat.
- In a large bowl, combine vegetables with olive oil, garlic powder, salt, and pepper.
- Thread the vegetables onto skewers, alternating colors and shapes for a rainbow effect.
- Place the skewers on the grill, cooking for 10-15 minutes.
- Remove from the grill and let rest for a couple of minutes before serving.
