Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 small red bell pepper finely chopped
  • 1/4 cup blue cheese crumbled
  • Fresh chives or parsley for garnish

Method
 

  1. Boil the eggs in water for 10-12 minutes.
  2. Cool the eggs in ice water for 5-10 minutes.
  3. Peel the eggs and slice them in half lengthwise.
  4. Scoop the yolks into a bowl and set the whites aside.
  5. Add mayonnaise, mustard, paprika, salt, and pepper to the bowl with yolks.
  6. Fold in the chopped red bell pepper and blue cheese into the yolk mixture.
  7. Pipe or spoon the yolk mixture into the egg whites.
  8. Garnish with fresh herbs and a sprinkle of additional paprika.
