- Boil the eggs in water for 10-12 minutes.
- Cool the eggs in ice water for 5-10 minutes.
- Peel the eggs and slice them in half lengthwise.
- Scoop the yolks into a bowl and set the whites aside.
- Add mayonnaise, mustard, paprika, salt, and pepper to the bowl with yolks.
- Fold in the chopped red bell pepper and blue cheese into the yolk mixture.
- Pipe or spoon the yolk mixture into the egg whites.
- Garnish with fresh herbs and a sprinkle of additional paprika.
