- Preheat your oven to 425°F (220°C).
- In a large bowl, combine honey, Sriracha, olive oil, lime juice, salt, and pepper.
- Add the carrot sticks to the bowl and toss until evenly coated.
- Spread the coated carrots on a baking sheet lined with parchment paper.
- Roast the carrots in the oven for 20-25 minutes, stirring halfway through.
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with chopped cilantro if desired and serve warm.
