Ingredients
  

  • 4 cups mixed spring greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 bell pepper diced
  • 1/4 red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Method
 

  1. Prepare the salad base by washing the greens.
  2. Slice the cherry tomatoes in half.
  3. Slice the cucumber and dice the bell pepper.
  4. Thinly slice the red onion.
  5. Crumble the feta cheese.
  6. In a small bowl, whisk together olive oil, red wine vinegar, honey, salt, and pepper.
  7. Combine all ingredients in a large bowl.
  8. Taste and adjust seasoning if necessary before serving.
