Ingredients
  

  • 2 cups chopped romaine lettuce
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 red onion finely chopped
  • 1 cup diced bell peppers any color
  • 1/2 cup crumbled feta cheese
  • 1/4 cup pitted Kalamata olives halved
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Prepare the vegetables by washing, peeling, and chopping them as specified.
  2. In a large bowl, combine the chopped romaine, cucumber, tomatoes, red onion, and bell peppers.
  3. Add the feta cheese and Kalamata olives to the vegetable mixture.
  4. In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper to create the dressing.
