  • 2 boneless skinless chicken breasts (1 lb)

  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 6 cups mixed greens spinach, arugula, romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber thinly sliced
  • 1/2 red onion thinly sliced
  • 1/4 cup feta cheese crumbled (optional)
  • 1/4 cup balsamic vinaigrette

Method
 

  1. Prepare the chicken for grilling.
  2. Marinate the chicken.
  3. Preheat your grill.
  4. Grill the chicken.
  5. Allow the chicken to rest.
  6. Prepare the salad base.
  7. Slice the grilled chicken.
  8. Add feta and dressing.
  9. Serve immediately.
